Ingredients
- 2 cups cooked brown rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- 4 sheets of nori (seaweed)
- 1 small cucumber, julienned
- 1 small carrot, julienned
- 1 ripe avocado, sliced
- 200g fresh tuna or salmon (optional)
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Cooking Method
Prepare the Rice: In a bowl, mix the warm cooked brown rice with rice vinegar, sugar, and salt. Stir until the sugar and salt dissolve completely. Allow the rice to cool to room temperature.
Prepare the Ingredients: Place a bamboo sushi mat on a clean surface. Place a nori sheet, shiny side down, on the mat.
Add the Rice: With wet hands, spread a thin, even layer of the prepared brown rice over the nori, leaving about 1 inch at the top edge uncovered.
-

Add Fillings: Arrange a few strips of cucumber, carrot, avocado, and fish (if using) along the bottom quarter of the rice.
Roll the Sushi: Use the bamboo mat to gently roll the sushi, tucking it tightly. Use the uncovered nori edge to seal the roll by wetting it slightly with water.
-

Slice and Serve: With a sharp knife, cut the roll into 6-8 pieces. Repeat the process with remaining ingredients. Serve with soy sauce, pickled ginger, and wasabi.
Nutritious Value and Pairings
Brown rice is a whole grain that retains its nutrient-rich bran and germ. It is a fantastic source of fiber, manganese, and magnesium, contributing to improved digestion, bone health, and energy production. The addition of fresh vegetables like cucumber and carrot provides essential vitamins and minerals, while avocado offers healthy fats and a creamy texture.
For those who include fish in their diet, tuna or salmon adds a dose of omega-3 fatty acids, essential for heart health.
