Ingredients

4 medium russet potatoes, peeled and diced

1 teaspoon of salt 1/2 teaspoon of black pepper

4 cups of chicken or vegetable stock

1 cup of heavy cream or half-and-half

1 bay leaf Fresh chives or parsley, chopped (for garnish)

Cooking Method

Prepare the Leeks: In a large pot, melt the butter over medium heat. Add the chopped leeks and garlic, then sauté until the leeks are soft and translucent, about 5 minutes.

Add the Potatoes: Stir in the diced potatoes, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

Simmer the Soup: Pour in the stock and add the bay leaf. Bring the mixture to a boil, then reduce heat to low, and let it simmer for 20-25 minutes until the potatoes are tender.

Blend the Soup: Remove the bay leaf. Use an immersion blender to purée the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth, returning it to the pot once done.

Add the Cream: Stir in the heavy cream or half-and-half. Heat gently over low heat for another 5 minutes. Adjust seasoning with additional salt and pepper, if necessary.

Serve: Ladle the soup into bowls and garnish with fresh chives or parsley. Serve hot.
