Whether served warm with a side of butter or enjoyed on their own, these muffins make for a perfect breakfast treat.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated apples (about 2 medium apples)
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup milk

Cooking Method

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with butter.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat together the melted butter and brown sugar until well combined. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix the batter.
  5. Gently fold in the grated apples and walnuts (if using), and then add the milk to achieve a smooth batter consistency.
  6. Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Nutritious Value & Pairings

Crisp Apple Breakfast Muffins offer a balance of carbohydrates, fiber, and fats, with the apples providing a good source of vitamin C and dietary fiber. The whole wheat flour and walnuts (if included) add additional fiber and healthy fats, contributing to a nutritious start to your day.

These muffins are delicious on their own, but they can be paired with a side of Greek yogurt or cottage cheese for extra protein. For a refreshing contrast, consider serving them with a mixed fruit salad or a green salad with arugula and a light vinaigrette. To complement the flavors, a warm cup of coffee or a spiced chai tea can be an excellent beverage choice to enjoy alongside these breakfast muffins.
