Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 2/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated apples (about 2 medium apples)
- 1/2 cup chopped walnuts (optional)
- 1/4 cup milk
Cooking Method
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with butter.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat together the melted butter and brown sugar until well combined. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
- Fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix the batter.
- Gently fold in the grated apples and walnuts (if using), and then add the milk to achieve a smooth batter consistency.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Nutritious Value & Pairings
Crisp Apple Breakfast Muffins offer a balance of carbohydrates, fiber, and fats, with the apples providing a good source of vitamin C and dietary fiber. The whole wheat flour and walnuts (if included) add additional fiber and healthy fats, contributing to a nutritious start to your day.
These muffins are delicious on their own, but they can be paired with a side of Greek yogurt or cottage cheese for extra protein. For a refreshing contrast, consider serving them with a mixed fruit salad or a green salad with arugula and a light vinaigrette. To complement the flavors, a warm cup of coffee or a spiced chai tea can be an excellent beverage choice to enjoy alongside these breakfast muffins.
