Cooking Method
Boil the Eggs: Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the saucepan and remove from heat. Let eggs sit for 10-12 minutes.
Cool and Peel: Transfer the eggs to a bowl of ice water and let sit until cool, about 5 minutes. Peel the eggs carefully under running water.
Prepare the Filling: Slice the eggs in half lengthwise and gently remove the yolks. Place the yolks in a mixing bowl and add mayonnaise, Dijon mustard, white wine vinegar, chives, sun-dried tomatoes, and smoked paprika. Mix until smooth. Season with salt and pepper to taste.
