Ingredients
- 4 large bell peppers (any color)
- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1/2 cup kalamata olives, pitted and chopped
- 1/2 cup crumbled feta cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Cooking method
Prepare the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside.
Cook the Rice: In a medium saucepan, cook the rice following the package instructions. Once cooked, fluff with a fork and set aside.
Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

Mix the Filling: Add the drained tomatoes, chopped olives, cooked rice, and crumbled feta cheese to the skillet. Stir in the oregano, basil, salt, and pepper. Mix well until the ingredients are fully combined.
Stuff the Peppers: Fill each bell pepper with the rice mixture, pressing down gently to pack the filling. Place the stuffed peppers upright in a baking dish.
Bake: Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and slightly charred around the edges.
Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Nutritious Value and Pairings
Mediterranean stuffed peppers with rice are not only delicious but also nutritious. Bell peppers are rich in vitamins A and C, which are beneficial for immune health and skin. The inclusion of brown rice provides dietary fiber, aiding digestion and promoting a feeling of fullness. Feta cheese adds calcium and protein, while olives contribute healthy monounsaturated fats.
For a complete meal, pair these stuffed peppers with a fresh Greek salad, featuring cucumbers, tomatoes, red onions, and olives, dressed in a light vinaigrette. For drinks, consider serving with a crisp white wine like Sauvignon Blanc or a refreshing iced tea with a squeeze of lemon. These pairings enhance the Mediterranean dining experience, providing a well-rounded and satisfying meal.
