Savory Mushroom Risotto in 30 Minutes
Savory Mushroom Risotto in 30 Minutes
Risotto, a traditional Italian dish, is synonymous with comfort and sophistication. However, making this creamy delight doesn't have to be a time-consuming affair. Our quick and savory mushroom risotto recipe is here to prove that you can enjoy a delicious, restaurant-quality meal in just 30 minutes.
Ingredients
- 1 cup Arborio rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (such as cremini or button)
- 1/2 cup dry white wine
- 4 cups chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Cooking Method
Prepare the Broth: In a medium saucepan, bring the chicken or vegetable broth to a gentle simmer over medium heat. Reduce the heat to low and keep warm.
Sauté Aromatics and Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent, about 3 minutes. Stir in the sliced mushrooms and cook until they are golden brown and have released their moisture, approximately 5 minutes.
Toast the Rice: Add the Arborio rice to the skillet, stirring continuously for about 1-2 minutes, ensuring each grain is well coated with oil and slightly toasted.
-

Deglaze with Wine: Pour in the white wine and stir until it’s completely absorbed by the rice.
Cook the Risotto: Begin adding the warm broth, one ladle at a time, stirring gently and allowing each addition to be absorbed before adding the next. This should take about 15-18 minutes, or until the rice is creamy and al dente.
Finish with Cheese and Butter: Remove the skillet from heat and stir in the Parmesan cheese and butter until melted, seasoning with salt and pepper to taste.
Garnish and Serve: Serve the risotto immediately, garnished with chopped fresh parsley.
Nutritious Value and Pairing Suggestions
Mushroom risotto is not just rich in flavors, but it also packs a nutritious punch. Arborio rice is a good source of carbohydrates, providing energy, while mushrooms contribute valuable vitamins such as Vitamin D and various B vitamins. Parmesan cheese adds protein and calcium, making it a balanced meal option.
To complement the creamy risotto, consider pairing it with a fresh, crisp side salad like an arugula salad with lemon vinaigrette. For a drink, a chilled glass of the same dry white wine used in the recipe—such as a Pinot Grigio or Sauvignon Blanc—harmonizes beautifully with the dish’s flavors. Alternatively, a light sparkling water with a slice of lemon can serve as a refreshing non-alcoholic option.
